Okay, I have tried countless times to write down some thoughts about Eileen, but each time I do so, they don't seem enough. They don't encapsulate her legacy. They don't reflect on the woman who truly left an indelible mark on our lives. So, what thoughts can I offer that are befitting of a lady of Eileen's stature? Eileen was a wife, a mother, a sister, an aunt, a teacher, a cook and a friend. We're all that little bit richer from having had Eileen in our lives.
